Erica started only a few short years ago, making small batch ice cream and being named one of the best King Cake flavored ice creams in the city. She now operates in the Hotel Peter and Paul to serve her artisan ice cream to locals and tourists alike.

Neesa Peterson spent her youth between New York and New Orleans, and began her snoball operations in New York, bringing the flavor of her childhood to the East Coast. She’s since come back to home to thrive in the snoball culture of New Orleans to make syrups inspired by the South.

Before starting her own business, Chef Ruby was the executive pastry chef at Sylvain and appeared on Food Network’s Spring Baking Championship. We recently asked her to create the dessert bar for the Celebrity wedding of Darren Criss and Mia Swier shown in the banner image above.

Chef Tess has recently made her way to New Orleans after successfully completing her time at Momofuku. She immediately began crafting delectable baked goods after the move, and currently spearheads crafting the recipes for City Greens’s healthy dessert line.
